Next under the spotlight is our lovely Beth, who takes her role as Office Coordinator to a whole new level.  We’re talking serious organisation skills! We grilled her on her food heaven and hell, what she loves about Southbourne, what she’d chuck into Room 101 and more…

 

What do you love most about living in Southbourne? 

Southbourne is so family friendly – the independent shops and restaurants on The Grove, and being so close to the beach. It really is the best.

 

You’re given as much money as you need to go on an awesome day trip with your family ‒ where do you go?

A private jet to Lapland. I love snow and I love Christmas. With small children in tow, it would be an amazing experience.

 

We’re blasting you 200 years into the future. What three things would you like to see changed about the world?

Self folding laundry and teleporting children to after school clubs. And maybe flying cars so I could go anywhere in the world that I wanted to. 

 

What’s your food heaven and food hell?

I love food so this is tricky. A three course meal for heaven ‒ starter of prawns and scallops, roast beef and all the trimmings for main and a chocolate torte for pudding. Food hell ‒ kidney and baby sweetcorn!

 

You get to throw three things into Room 101. What are they?

  • Warm wine
  • Inconsiderate drivers
  • People who don’t pick up after their dog

 

Out of everybody who’s ever lived, who would you most like to meet and why?

My great grandparents. They were polish and I would love to hear their stories firsthand.

 

What did you want to be when you grew up?

Professional chocolate taster.

  • Trek to Machu Picchu 
  • Go on safari
  • Run the London marathon
